THE STORY
Bologna la Grassa has always been famous for its good food, an ancient gastronomic tradition that seems to have lost its appeal among tourists and gourmets. The Tour-tlen association was founded in February 2013 to restore the culinary fame of the Emilia-Romagna capital.
The love for traditional dishes and the desire to experiment and challenge one another unites these 16 great chefs and restaurateurs who, with passion, want to turn the spotlight back on Bologna and its great gastronomic heritage, rediscovering dishes that are found in everyone's homes. Thus, on February 15, 2013, Tour-tlen was born, to give new flavor and impetus to the city, starting with the commitment of professionals of taste.
The goal is to show how together we can build something great for Bologna, offering moments of meeting that focus on the high quality and excellence of the territory, also highlighting the peculiarities of each restaurateur. Each dish will in fact be revisited and interpreted by each chef in a different way, offering the public a wide range of choices.

Mortadella Bologna IGP Selezione Tour-tlen was created thanks to the experience of two important Bolognese companies: Felsineo, which has been synonymous with high-quality mortadella since 1963, and the Ristoassociazione Tour-tlen which brings together local chefs with the aim of promoting Bolognese gastronomic culture.

The Tortellino Festival organized by the RistoAssociazione TOur-tlen returns to Palazzo Re Enzo for the eleventh year. On Wednesday 4 October, the best professionals of taste will offer the public 21 tasty recipes where the protagonist will be the king of Emilian cuisine: the tortellino, recognized in 2021 as De.Co. by the Municipality of Bologna.
